Quercetin is one of the most active of flavonoids and is commonly found in many vegetables and fruits such as apples, citrus fruits, berries, grapes, onions, cauliflower and cabbage. It is known to directly inhibit inflammatory processes including the manufacture and release of histamines. Quercetin augments the effectiveness and activity of vitamin C in the body.
